In capturing temperature data it seems that the shortest frequency is 600 seconds (i.e. 10 minutes) whereas documentation/notes on the wiki suggest that 60 seconds is an option. Is that information out of date? If not, how can I set the logging of analog channels to less than 600 seconds?

10 minutes is the lowest interval for "free" data logging. We're trying to come up with a premium service that will let users get more data logs per module at much better sampling rates. Don't worry, it's won't be too expensive. I hate subscription based services as much as everyone else. But will need to cover the cost somehow.
I'll have to track down the mention of 60 second logging in the wiki. I don't want to mislead anyone.

Thanks, Jason. A subscription-based service is reasonable (subject to pricing) for the "professional" version. I expect there is a lot of data that is going to go through your servers, which has a cost.
