Long Temperature probe

I'd like to put a temperature probe in my swimming pool to monitor the temperature changes over time.  From reading some of the other posts here I gather that it's OK to put the probe in water.  My next question is how can I extend the length of the probe to reach the pool?  It's about 50 feet from the 204 to the pool.  Can I just splice some wire onto the probe to lengthen it?  Any particular type of wire I should use?

The type of wire on there is speaker wire and probably the easiest to work with if you are going to cut the wires. I think you can get to 50' pretty reliably.
